Egg fried rice
Serves 2: Cook one cup of rice with one cup of water. While the rice is cooking, chop one stalk of spring onion into small pieces and beat an egg. Heat a little oil in a non-stick frying pan. Add the egg to the pan, stirring briskly to create small pieces of fried egg. Add the rice and two pinches of salt. Stir fry until all is blended. Remove from heat and add the spring onion. Plate and serve.
